Meet August’s Sweet of the Month – Betsy!
Betsy loves to bake, especially birthday cakes for her and her family members’ birthdays every year. She says it’s one of the things that she is constantly looking forward to!
Have you heard of bireiki? It’s a Greek, layered vegetable pie that Betsy loves to cook at home for her husband and 2-year-old daughter, Alice! A few other favorites are lasagna, any kind of soup and spring rolls.
She hails from the Pacific Northwest, growing up in the Puget Sound where she spent her early childhood and college years. She says that she owes her love of bringing people together with food to her parents, who taught her how to be creative in the kitchen at a young age.
Betsy moved to Lincoln for five years and has kept Goldenrod on her radar since it opened over 3 (!!!!) years ago. Her favorite part of the shop is the inspiring and uplifting environment and thinks that each pastry is a piece of art – her favorites are macarons and crumble-buns!
